eats // Slow Cooker Pineapple Chicken

Eating clean and healthy can be a challenge some  most days, hence the month long hiatuses from blog posting.  With our recent move trying to get everything out of boxes and getting the little one adjusted to the new house cooking has been the last thing on my mind.  But eating out or eating prepackaged meals always comes with a hefty price tag that catches up with me... making me sick for weeks.  So I'm back to cooking, of course it's summer so who wants to slave in the kitchen all day of course the boxes are still not all unpacked nor is the child fully adjusted, but life goes on!  I dusted off my trusty crock pot the other day chopped up pineapple and zucchini, added some frozen chicken and ran outside in the sprinkler with my little man while dinner crocked away.  This recipe is so easy and is great for both those paleo & GF or not simply by omitting the taco shell. 


  • 2 large chicken breasts, boneless and skinless
  • 1 (12 ounce) jar of your favorite clean salsa
  • 4 small raw zucchini, halved, quartered, then sliced
  • 1/4 medium, fresh pineapple cubed
  • optional taco shells
  • Turn on slow cooker to the low setting and put in the chicken, salsa Cook for about 4-6 hours
  • Shred the chicken using two forks and mix in your raw zucchini and fresh pineapple
