Kale & quinoa bowl

This recipe is a power packed bowl full of the healthiest veggies!  I like to change it up from time to time when cooking this dish, sometimes I add grilled chicken, cooked with just a little fresh lemon juice and ground black pepper.  Other times I skip the chicken and enjoy a vegan bowl, either way it's delish every time!


              Kale & Quinoa bowl
          serves: 2  prep time: 10 min cook time: 20 min

Ingredients:

  • 1 cup quinoa
  • 1 T coconut oil
  • 1 T seaseme oil
  • 1/2 diced red onion
  • 1 minced garlic clove
  • 3 cups of kale - torn
  • 2 cups broccoli florets
  • 2 T soy sauce / tamari 
  • 2 T water
  • 1 lime
  • 1/2 T Dijon mustard 
  • 1 t ginger
  • 1/2 t black pepper
  • Dash of red pepper flakes - optional 
  • 2 T seaseme seeds

Instructions:
  • Cook one cup of quinoa
  • In a all saucepan melt coconut oil.
  • Add onion, sauté for 2 - 3 min.
  • Add garlic, kale, broccoli and saute for 3 min.
  • In a small bowl mix: soy sauce, water, juice from 1/2 of lime, Dijon mustard, ginger, pepper, red pepper flakes, seaseme seeds.
  • Add the soy mixture to the sauce pan, mix well and cook for 2 min.
  • Serve over quinoa, garnish with seaseme seeds, lime wedge & additional soy sauce to taste.
