eats // steak fajita bowl

I love anything you can eat from a bowl. Weird, I know! And when I get cravings for Chipotle's burrito bowl, this recipe is an instant fix to the craving.  I serve it over cauliflower rice, recipe can be found here for the rice.

                                                                 steak fajita bowl
serves: 4   prep time: 1 -24 hours  cook time: 20 min
 
Ingredients: 
 
steak rub:
  • 2 T coconut oil, melted
  • juice of 1 lime
  • 1 T paprika
  • 1/2 T chili powder
  • 1 t garlic powder
  • 1 t onion powder
  • 1 t course sea salt
  • 1/2 t ground cumin
  • 1/2 t dried ground oregano
  
  • 1 pound flank steak
  • 2 T coconut oil, melted
  • 1 red onion sliced
  • 1 red bell pepper thinly sliced
  • 1 orange bell pepper thinly sliced
  • 2 cups mushrooms sliced
  • avocado chopped
  • lime wedge for garnish
  • cilantro for garnish
  • salt & pepper to taste
Directions:
  • In large bowl, combine all ingredients for wet rub.  Add steak to the bowl, massage the rub into the steak.  Refrigerate for 1 - 24 hours.  After done marinating thinly slice into pieces.
  • Heat coconut oil in large sauté pan over medium heat.  Add onion & peppers and cook for 5 min. Then add the mushrooms and mix well. Cook for 3 min.
  • Preheat a cast iron skillet over high heat, sear the steak slices for 2 -3 min.
  • Add the steak slices to the pan with the veggies and toss to mix.
  • Chop lime & cilantro for garnish
  • Serve over cauliflower rice

    1. Thanks Sara! It was yummy! It's also great over lettuce as a salad. You should try it. Love reading your blog your post always make me laugh & your little ones are too cute!
