Going paleo or gluen free dosen't mean you have to deprive yourself of yummy food.  It just means you have to get a little more creative in the kitchen. This dish is a fun healthy spin on spaghetti carbonara.

                                                          spaghetti squash carbonara
serves: 2   prep time: 10 min cook time: 2 hours
  • 2 t sea salt
  • 1 1/4 t fresh cracked black pepper 
  • 1 large spaghetti squash
  • 4 slices of bacon cut in small strips
  • 2 t minced garlic
  • 1/4 cup chicken broth
  • 2 egg yolks 
  • 1 whole egg 
  • 1 cup graded parmasiam cheese
  • Green onions 
  • Optional- peas
  • Preheat oven 375
  • Place squash on a pan lined with foil
  • Bake for 1 hr 30 min or until tender
  • Cut squash in half and remove seeds
  • Scrape out the squash using a fork
  • Place squash in a bowl
  • Cook bacon on medium until crispy in a large sauté pan
  • Add garlic & sauté for 1 min
  • Add broth and cook until liquid had evaporated 
  • In a bowl wish eggs together with the cheese
  • On low heat combin the eggs with the bacon mixture, do not cook the eggs through. Warning: the eggs heat up fast, make sure it's on low heat
  • Add squash and mix well
  • Salt & pepper to taste
  • Garnish with green onions
  • Also taste great if you add peas
