eats // paleo chiken zoodle soup

             

 There is something so comforting about good ol' fashion chicken noodle soup!  If you're gluten free or just cutting back on carbs you may have given this winter staple up --- but you don't have to.  Zucchini zoodles to the rescue!  And even better I figured out a way to crock pot this soup using left over chicken, the EASIEST week night dinner ever!
                                                      
 
slow cooker chicken "zoodle" soup
serves: 6   prep time: 15 min  cook time: 4 hours
 
Ingredients: 
  • 2 quarts chicken broth - low sodium, gluten free *if paleo check here for homemade broth
  • 1 small onion, diced
  • 2 carrots sliced
  • 2 celery stalks diced
  • 2 springs of fresh sage
  • 1 medium zucchini - spiraled into "noodles" you can also use a julienne peeler
  • 2 cups shredded chicken - I just use left over chicken or rotisserie chicken 
  • sea salt & ground black pepper to taste
  • crock pot
Directions:
  • dice onion, celery & carrots
  • spiral zucchini
  • shred chicken
  • add all above ingredients into crock pot
  • add chicken broth
  • cook on high for 4 hours or low for 6 - 8
  • salt and pepper to taste
  • remove sage leaves
