eats // roasted garlic and lemon artichokes

If you're planning on entertaining and are in need of a quick & easy paleo appetizer or side dish this recipe will not disappoint.  Not only is it mouthwateringly scrumptious but also looks oh so pretty plated.. just don't tell your guest it only took you 15min to prepare. ;)

roasted garlic and lemon artichokes  
serves: 4    prep time: 15 min  cook time: 50 min
  • 4 artichokes
  • 2 fresh lemons
  • 4 tablespoons extra virgin olive oil
  • 12 garlic cloves
  • salt & pepper
  • foil
  • preheat oven 425
  • cut top and bottom stem of artichoke off --- about 1/3" off
  • hollow out and discard the center and inner leaves
  • spread leaves out as far as possible
  • drizzle 1 tablespoon and 1/2 lemon juice pre artichoke
  • stuff 3 garlic cloves (per artichoke) in the hollowed out center 
  • season with salt & pepper
  • wrap tightly in foil
  • roast 50 min or until tender
You can serve with melted butter to dip the leaves. And don't forget to eat the best part, the "choke" of the artichoke, off the top and bottom. ;)
