eats // paleo nachos

Whether you're into the super bowl or just in it for the commercials, it's always a fun excuses to chow down on some comfort food.  One of my favorites are these paleo nachos. The sweet potato chips give the dish a slight sweetness you just can't find in regular chips & tastes oh so good with the salty and citrus flavors from the chicken and guacamole.  It's always a winner in our house, just make sure to cook extra chips they go fast ;).

serves: 4 - 6   prep time: 20 min  cook time: 6 hrs
  • 2 medium diced tomatoes
  • 2 t cilantro, chopped
  • 2 t lime juice
  • 2 t green onions, chopped
  • guacamole- 2 avocados mashed, 1/2 small yellow onion diced, 1/2 tomato diced, fresh juice from 1 lime, 1 T chopped cilantro, salt & pepper to taste
  • 3 large sweet potatoes
  • 3 t melted coconut oil
  • 1 t salt
  • 1 lb chicken
  • 1 medium yellow onion
  • 1 green chili diced
  • 2 garlic cloves, minced
  • 1 t ground cumin
  • 1 t paprika
  • 12 oz tomato paste
  • 2 diced tomatoes
  • 1 tsp salt
  • 1/2 tsp pepper
  • juice from 1 lime
  • pre-heat over 375
  • thinly slice sweet potatoes
  • toss sweet potatoes in 3 t of melted coconut oil & 1 t sea salt
  • place the chips in a single layer on baking sheet with parchment paper
  • cook for 10 min., flip and cook an additional 10 min.
  • toss all ingredients in crock pot
  • cook on low 6 hours
  • last hour shred the chicken breast using 2 forks, cook for an additional hour
  • spread chicken evenly over chips
  • add lime juice
  • top with guacamole, cilantro, green onions & tomatoes
Grocery shopping for our nachos would have been oh so boring without these two lovely's.  Charlie could care less that Halloween's over, he's still going to carry his trick-or-treating basket around town.  It's stocked with all his favorite cars, of course, lord help us if we leave the house without lighting McQueen & Mater.
