eats // hidden-veggie loaf



It's the coldest it's been in GA in a looong time.  So naturally, cabin fever set in, froggy & penguin had a diving board competition, froggy won.  It's safe to say we're ready for spring! We also warmed the house up baking a little something I like to call "hidden-veggie loaf" those who are grain free and missing bread this a great paleo option.  It's especially great for picky little ones who don't like to eat their veggies!
hidden-veggie loaf
serves: 6-8   prep time: 20 min  cook time: 30-45 min
 
Ingredients: 
  • coconut oil
  • 4 oz pitted dates
  • 1/4 cup shredded zucchini
  • 1/2 cup shredded carrots
  • 5 eggs
  • 1/2 cup lactaid
  • 1/2 cup applesauce
  • 2 cups almond flour
  • 1 1/2 t baking soda
  • 1/4 t cinnamon
  • 1/2 teaspoon nutmeg
Instructions:
  • grease baking pan with coconut oil
  • pre-heat oven to 350
  • Shred zucchini & carrots --- once shredded place on paper towel to drain any access moisture
  • Place dates, eggs, and applesauce in a food processor for 30 sec
  • Add almond flour, baking soda, cinnamon, nutmeg, and sea salt process for 20 more sec
  • Add veggies and lactaid
  • Stir
  • Mold into desired shape
  • bake at 350 for 30-45 min
  • 1/4 t sea salt
