eats // brussels sprout & date salad

This grain free, paleo friendly Brussels sprout & date salad is super easy, most of the ingredients you probably already have on hand.  It's a perfect dish to assist with those new years resolutions, of health eating.  If I could I would honestly eat this salad every day! It's sweet, savory, crunchy and just simply delish!



Brussels sprouts & date salad
serves: 8   prep time: 5 min  cook time: 30 min
 
Ingredients: 
  • 2 lb mini Brussels sprouts
  • 1 t olive oil
  • 2 t butter
  • 3 minced garlic
  • 1/3 cup balsamic vinegar / click here for paleo friendly balsamic vinegar recipe
  • 1/4 cup pitted dates / paleo friendly dates : medjool & California dates
  • salt & ground black pepper to taste


Instructions:
  • preheat oven 425
  • wash & cut the Brussels sprouts in halves
  • `spread Brussels sprouts in baking pan
  • drizzle oil over Brussels sprouts
  • roast 20 min or until crispy - stirring once
  • melt butter over medium heat in a nonstick skillet
  • add garlic
  • cook for 30 sec
  • add balsamic vinegar & dates
  • cook for 5 min or until sauce has thickened
  • add Brussels sprouts to the sauce and stir
  • salt & ground black pepper to taste
