eats // protein packed pumpkin bites

Back to regularly scheduling programing after a fun family filled week at the beach, celebrating a dear friends wedding!  We returned to coooold weather in Atlanta. So I'm cooking it up, keeping our belly's and the house warm.  I've been working on these little protein packed pumpkin bites for a while now and finally found the right tasty mixture of sweet and savory.  These are great for desserts or even snacks on the go.  The flavors are fabulous and tasty enough for adults and kids both, you could even sneak in a few chocolate chips and win a child heart over even more! :)

 serves: 12    prep time: 15 min  cook time: 15 - 20 min
  • 1/2 cup walnuts
  • 13 oz pumpkin puree
  • 1 cup coconut flakes
  • 2 t vanilla
  • 1 T cinnamon
  • 2 t nutmeg
  • 2 t ground cloves
  • 1 T honey
  • 1/4 cup almond flour *or regular baking flour
*** for a little sweeter of a treat add mini chocolate chips to the blended mixture or serve with whipped cream***
  • mix top ingredients (with the acceptation of flour) in blender and blend on pulse till walnut are chopped and all ingredients are blended
  • pour mixture in bowl
  • add flour and mix
  • pre-heat oven to 350
  • roll mixture into shape of balls
  • bake on 350 for 15 -20 min
