eats // turkey meatball muffins

 This is such a fun paleo recipe --- great for little's, entertaining or even dinner.  We ate it for dinner with brussels sprouts as a side & even picky little Charlie had fun eating them!


  serves: 10 - 12 muffins   prep time: 25 min     cook time: 25 - 30 min
 
Ingredients:
  • 1 1/2 lbs ground turkey
  • 1 T olive oil
  • 1/2 diced yellow onion
  • 1/2 cup green onion
  • 1/2 cup diced mushrooms
  • 1/4 cup tomato paste
  • 1 T ground mustard
  • 1 t fresh rosemary
  • 1 t thyme
  • 1/2 t garlic powder
  • 2 minced garlic cloves
  • 1 egg
  • 1/4 cup water
  • 1 pureed carrot
  • 2 t Worcestershire sauce
Instructions:
  • preheat oven 350
  • grease muffin pan
  • heat skillet with olive oil and sauté- onions, mushrooms & peppers till tender
  • in small bowl mix tomato paste, mustard, Worcestershire, rosemary,  garlic, water & pureed carrot
  • in large bowl mix turkey meat, sauted veggies, egg, thyme & garlic powder
  • spoon meat mixture in muffin pan and bake for 10 min
  • while muffins are baking heat tomato paste mixture in skillet over low / medium
  • spoon tomato paste mixture over muffins and bake for an additional 15 - 20 min.
