eats // paleo "fried" green tomatoes

Here in the south fried green tomatoes are a staple and a yummy one at that!  I try to steer clear of "fried" foods but love fried green tomatoes!  I played around a little with some green tomatoes and I love the outcome of my coconut flour "baked" green tomatoes.  A great starter to any meal or side.  I served it as a side to tomato soup a prefect  fall dinner!

serves: 2  prep time: 5 min  cook time: 15 min
  • 1 large green tomato
  • 2 T coconut oil (melted)
  • 2 T coconut flour
  • 1 T black pepper
  • wax paper
  • thinly slice tomato
  • lightly spread coconut oil on each side of tomato slices
  • lightly toss each slice in flour and pepper
  • line baking sheet with wax paper
  • add tomato slices - not overlapping
  • bake on 375 for 10 min
  • prepare sauté pan on stove top with 1/2t of coconut oil melted of medium heat
  • add tomatoes and sauté for 5 min for crispy texture
