We spent our last weekend of summer with family and friends, running in the sprinkler (pic's to come :)), enjoying yummy food and drinks. Bye-bye summer hello fall! This dish is a perfect Paleo starter to any meal, especially as we transition into the cooler months when pears are in season. It's super easy and even Charlie enjoyed it, must be his Italian roots coming out!
serves: 8 - 10 prep time: 5 min cook time: 45 min
- 4-5 large pears (cut into slices)
- 1 cup balsamic vinegar
- 1/2 lb prosciutto (cut in half lengthwise)
- In a small saucepan over medium heat, bring the vinegar to a boil, then reduce to low heat and let it thicken for 45 min.
- Cut pears into slices
- Once the vinegar is thick, wrap prosciutto around each pear slice, drizzle balsamic reduction over and enjoy!
