eats // paleo fall slow cooker // cranberry chicken

 We had a perfect fall weekend, spent with family, watching football & dusting off the crock-pot! Charlie was most impressed with the GA bulldogs and of course enjoyed throwing banging his mini football over and over again at the TV!   I was most impressed at how well red wine paired with my cranberry, pear & butternut squash chicken.  It was like a fall party in my belly! :)

                                                                                                         
                                                                                       
 serves: 4   prep time: 30 min     cook time: 4 - 5 hours on slow
 

Ingredients:
  • 1 lb chicken breast (I used frozen)
  • 2 pears
  • 1  yellow onion
  • 1 1/2 cup cranberries
  • 1 medium butternut squash (and a large sharp knife to cut it --- the most difficult part of this dish)
  • 1 T cinnamon
  • 1 cup apple cider
  • 1/2 t garlic powder
  • salt & pepper to taste
 
Instructions:
  • slice pears
  • slice onion
  • chop squash in half and cut into cubes
  • place chicken breast into crock pot
  • add pears, onion, squash & cranberries
  • mix apple cider, cinnamon, garlic powder, salt and pepper together & pour over chicken
  • cook on low for 4 - 5 hours
