eats // paleo shrimp fried "rice"

Going paleo or gluten free doesn't mean you have to deprive yourself of yummy shrimp fried rice. It may not have arrive on my doorstep after a quick call but it sure fixed my craving for Chinese food  (without the grease or MSG).  And, umm... there were no leftovers just saying!

                                           serves: 2-3   prep time: 25  min     cook time: 20 min

Ingredients:
  • 1 dozen peeled & deveined shrimp
  •  2 medium heads of cauliflower rice
  • 2 eggs- beaten
  • 1 cup chopped white onion
  • 2 minced garlic cloves
  • 1 large carrot diced
  • 1/2 cup peas
  • 1/4 cup red pepper diced
  • 2 T coconut oil
Instructions:
  • In a large pan melt coconut oil
  • mix onion and garlic and cook till tender- about 4 min
  • stir in peas & carrot, cook till tender- about 5 min
  • add shrimp, cook- about 1 min
  • stir in cauliflower rice, cook about 2 min
  • mix in 2 T paleo soy sauce
  • push rice, shrimp & veggies to one side of pan, pour in beaten eggs, stir to scramble
  • mix egg with rice, shrimp & veggies
  • enjoy!
