eats // paleo burger sans bun & grilled bok choy

When I started this new cooking venture it was to explore fun new recipes I can eat without suffering after, keeping my own cookbook online and hopefully helping a couple others along the way. Through this I've found what's most important to me is not feeling deprived of good tasting food! It's no fun when you have food allergies, celiac, crohn's disease, reflux or any other illness involving food. Unfortunately much of controlling your illness is trail and error, experimenting with which foods work and what foods to cut out, so you can enjoy eating again! I've learned that you don't have to feel deprived or face food in fear.  Yes, it's much easier to drive up to a window and order your burger (trust me I have a toddler, I know) but the reward that comes from a healthy cooked meal is worth the time. You may not be able to have your fast food burger or even a bun on that burger but hello who needs a bun when you can have fancy dancy bok choy!

*Even if you have a lettuce allergy this may work for you, I find that "cooked" greens or veggies are much easier to digest then raw.

serves: 3    prep time: 10  min     cook time: 15 min
  • 1 lb ground beef
  • 1/4 red onion minced
  • 1 T Dijon mustard
  • 1 t garlic powder
  • 1/2 t sea salt
  • 1/2 t ground pepper
  • tomato & onion for garnish
  • mix together all above ingredients (accept garnish)
  • form meat into 3 patties
  • using your thumb make an indentation in the center of burger
  • grill on medium-high heat till desired doneness
                                       serves: 3    prep time: 5  min     cook time: 10 min
 grilled bok choy
  • bunch of bok choy
  • sea salt
  • ground pepper
  • 2 t coconut oil
  • 1 t balsamic vinegar
  • 1/8 t garlic powder
  • 1/8 paprika
  • Preheat oven to 400
  • wash bok choy
  • season with sea salt & ground pepper on both sides *to taste
  • mix well: coconut oil, balsalmic vinegar, garlic powder, and paprika
  • brush coconut oil mixture over bok choy
  • cook for 4 min or until leaves are crispy
  • flip and grill for 4 additional min
  • serve with burger, tomato, onion and *avocado puree
*Avocado puree:
  • remove pit from one avocado
  • in small bowl: mix avocado with 1 T of water, juice from 1/2 of a lime & ground pepper & salt to taste
