eats// butternut squash fries

 My last post was paleo hamburgers so it's only fitting that this post is paleo / gluten free butternut squash fries.  What better side to go with your burgers!

serves: 2    prep time: 15  min     cook time: 40 min
Ingredients:
  • 1 large butternut squash
  • 1 t coconut oil
  • 3 T dill
  • 2 t coarse sea salt
Instructions:
  • preheat over 400
  • line baking sheet with parchment paper
  • use a sharp knife or peeler to remove the skin of squash
  • cut the squash in half lengthwise, rmaove the seeds and cut into fry sized strips
  • toss in large bowl with above ingredients
  • place fries on parchment papered baking sheet, not overlapping
  • bake 40 min or until crunchy on the outside
  • make sure to enjoy them while hot
