watermelon salad with goat cheese & mint on top of gluten-free crackers

 I hope everyone had a great holiday weekend. We enjoyed yummy food, good company & beautiful weather! With the heat rising here in the south I decided to make a refreshing watermelon salad on top of homemade grain free crackers, perfect for summer parties!




 Even little hands can't resist! ;)



Gluten-free crackers
  serves: 1 dozen   prep time: 20 min.   cook time: 45 min.

 Ingredients:
  • 2 cups gluten-free flour (I use rice but almond would also work)
  • 1/3 cups of water
  • 4 T butter (or ghee)
  • 1 T of rosemary
  • 1 T of sesame seeds
  • 1 t sea salt

Instructions:
  • preheat oven to 350
  • mix: flour, water, butter, rosemary, sesame seeds & salt together in large mixing bowl *texture should be like play dough
  • roll mixture into a ball
  • place 1 piece of wax paper on cookie sheet
  • place dough on top of wax paper
  • place 1 piece of wax paper over the dough and roll out till thin and level
  • remove top wax paper
  • using a pizza cutter cut into desired shape and size
  • lightly sprinkle sea salt over
  • bake 40-45 min or until desired crispiness
Top cracker with mint, watermelon cubes, goat cheese, chopped walnuts, lightly drizzle balsamic vinegar (omit if SCD diet) over salad and enjoy!
