paleo // crandberry chicken salad


Here's some inspiration for a super easy no cook dinner or lunch.  I found this great recipe in "The Paleo Kitchen" cookbook.  To save yourself any trouble try this when you have left over chicken.




 serves: 4-6    prep time: 10  min     cook time: 0 min
Ingredients:
  • 4 cups shredded chicken
  • 1/2 cup whole cranberries
  • 1/4 cup shredded carrot
  • 1/4 cup red onion
  • 1/4 cup diced green apple
  • 1/3 cup mayo *if paleo see below for mayo subsutite
  • tomato for buns
  • sea salt & ground black pepper to taste
  • * Pecans or walnuts would also be a great addition --- I tend to stay away from using nuts as they can cause inflammation but if you don't have inflammation issues throw some crushed nuts into the salad. 

Mayo- substitute:
  • 1 large egg
  • 3/4 cups avocado oil
  • 1 t lemon juice
  • 1 t Dijon mustard
  • pinch of sea salt
  • mix all in immersion blender for 10 seconds
  • store in fridge for 1 week


Instructions:
  •  use left over cooked chicken or cook chicken
  • in a large bowl mix all above ingridants
  • chill for 30 min
  • slice tomato to use as buns
