gluten free // the perfect cauliflower pizza crust

 
There's something about Friday nights & pizza (and of course a glass of wine ;))! While my Domino's days are over I still need that pizza fix, cauliflower to the rescue! While Joey was very much weirded out by watching this pie come together he was impressed by the end result, couldn't taste the cauliflower and the best we didn't feel sluggish after dinner. I foresee more gluten free pizza Fridays in our future!


 serves: 2-3    prep time: 25  min     cook time: 50 min
Ingredients:
  • 1 large cauliflower (4 cups cauliflower rice)
  • 2 T coconut oil
  • 2 garlic cloves minced
  •  1 egg, beaten
  • 1/3 cup soft goat cheese
  • 1 teaspoon dried oregano
  • toppings of choice
  • parchment paper

Instructions:
  • grate cauliflower into rice texture
  • pour coconut oil into large pan
  • heat on medium / high
  • once oil is melted add garlic
  • cook until tender
  • add the cauliflower and cook for 5 minutes
Pizza Crust

Instructions:
  • strain cauliflower rice with thin dishtowel squeezing out any excess moisture *very well
  • pre heat oven 400
  • mix strained rice, beaten egg, goat cheese, and spices in a large bowl
  • place dough on top of parchment paper on cookie sheet
  • shape the dough into desired shape leaving the edges a little higher (depending upon desired crust)
  • bake at 400 for 35 - 45 min (crust should be firm)
  • add sauce and load on the toppings
  • return to oven for 5 - 10 min
