crock pot grain free fiesta soup

It's only fitting that my first grain free (gluten free) recipe is cooked in the crock pot. It's super easy and has such wonderful flavors.


Serves: 4     prep time: 15 min     cook time: 6 hours on low in slow cooker

Ingredients:
  • 2 chicken breast
  • 15 oz of tomato juice
  • 1 yellow pepper
  • 1/2 yellow onion
  • 3 roma tomatoes
  • 1/2 t chili powder
  • 1 T summer savory spice
  • 1 t ground cumin
  • fresh cilantro
  • 1 pablino pepper
  • 1 cup black beans
  • SCD yogurt or sour cream (optional)
  • avocado (optional)
  • 3 limes (optional)

Instructions:
  • place 2 whole chicken breast in crock pot
  • dice tomatoes, onion & pepper, add to chicken
  • add 1 cup of water
  • add 15 oz of tomato juice
  • sprinkle chili powder, summer savory and ground cumin
  • throw in pablano pepper whole or cut and un-seed then add if you prefer more heat
  • add juice from 3 limes (optional)
  • 30 min before it's done add black beans
  • garnish with cilantro, avocado, SCD yogurt or sour cream (if not dairy free) to taste

Notes:

Due to my sensitivity to limes I opted not to use them and the soup was not missing any flavor. I used yogurt and my husband used sour cream both were wonderful but you really could go without if you use avocadoes they provided just right amount of cream.
